Braised Leeks

This is the simplest side dish you can make, and it turns out beautiful! Seriously, the hardest part is washing the leeks.  - Heather


Ingredients

4 Leeks

Chicken Stock

1 Lemon

Thyme (fresh, if possible)

Extra-Virgin Olive Oil

Salt


Instructions

1. Preheat oven to 350-degrees.


2. Wash and trim the leeks. I take off both ends, including the roots. Split them down the middle (long ways) and lay them in a rimmed baking sheet, but side up. 


3. Add the chicken stock and olive oil to about the half-way point of the leek (don't cover completely). You will want to use 2x chicken stock to olive oil (i.e., if it takes 1 cup of stock to get to the midway point of the leek, you'll add 1/2 a cup olive oil.)


4. Season with salt and pepper, the lay the fresh thyme sprigs and lemon slices over the top of the leeks. 


5. Cover with foil and bake for 45 minutes. Let them rest at least 10 minutes before serving.
